Quality & resilience scores are experimental and still being calibrated — they'll move as we dial in the math.

Frozen Machine Operator Playbook

A service-ready operating spec for frozen cocktails with Generic Slush and Taylor Company profiles, including temperature targets, recovery windows, and failure diagnostics.

frozenoperationstaylor-companymachine-calibration

Frozen programs fail when teams treat machine setup as guesswork. This playbook gives operators a repeatable baseline tied directly to the calculator's freeze-point model.

Use the profile that matches your floor hardware, lock in barrel and draw windows, and run the service checks every shift. If texture drifts, work the troubleshooting matrix in order: verify chemistry first, then tune machine settings.

This is the bridge between recipe math and service execution. One validated formula, one machine profile, one predictable pour all night.

Assumptions

  • Batch is pre-chilled and fully homogenized before loading.
  • ABV and Brix are measured pre-freeze from the same production lot.
  • Machine probes are calibrated and barrel readings are stable.

Operator Playbook

Generic Slush

Baseline commercial slush guidance for mixed machine fleets.

Barrel Temp

24-28°F

Draw Temp

26-30°F

Recovery

8-15 min

Service Checks

Barrel setpoint

Target: 24-28°F

Keeps freeze zone stable while avoiding hard-set lockups.

First-draw texture check

Target: 20-30 min after load

Confirms batch chemistry before peak service volume.

Post-rush recovery

Target: Back in range within 8-15 min

Slow recovery usually means mix is over-sweet or under-watered.

Troubleshooting Matrix

Cold soup / won’t set

Cause: Freeze point too low from high ABV or high Brix.

Action: Dilute with water, re-check ABV/Brix, and reset to profile temperature range.

Hard freeze / ice block

Cause: ABV too low or sugar too low for barrel conditions.

Action: Raise ABV or Brix in small increments and re-check after one recovery cycle.

Grainy draw

Cause: Formula is riding the edge of freeze range or cycling too cold.

Action: Bump Brix slightly and stabilize barrel setpoint before next pull.

Taylor Company

Tighter frozen comfort band tuned for Taylor-style barrel control.

Barrel Temp

23-27°F

Draw Temp

26-28°F

Recovery

6-12 min

Service Checks

Barrel setpoint

Target: 23-27°F

Tighter control band for consistent crystal structure and body.

Draw temperature

Target: 26-28°F

Keeps service texture stable and prevents wet pours.

Recovery after rush

Target: Back in range within 6-12 min

Extended recovery is an early signal of spec drift or overrun mismatch.

Troubleshooting Matrix

Loose, wet texture

Cause: Freeze point sits below Taylor comfort band.

Action: Raise freeze point via dilution and verify barrel target remains below mix FP.

Over-firm draw

Cause: Mix sits above freeze band or machine running too cold.

Action: Raise ABV/Brix slightly or move barrel setpoint toward the high end of range.

Inconsistent pulls during service

Cause: Recovery lag from warm load or unstable formula.

Action: Pre-chill batch, verify water fraction, and re-validate draw temp every 2-3 cycles.
