This week’s operating note: machine temperature must run below the mix freeze point. If the barrel runs warmer than the liquid’s freeze point, you get cold soup, not slush.
This week’s adjustment drill: 1) Load the preset. 2) Raise Brix toward 18 and observe texture risk. 3) Drop ABV toward 4.5% and watch hard-freeze risk increase. 4) Return to baseline and lock your service spec.
